New Year’s Eve... Celebrating Haiti’s Independence Day too!

 Chris and Sarah decided to host New Year’s Eve this year… and we had a Haitian theme to celebrate Haiti’s Independence Day.  Haiti is a big part of their lives… not only because Chris has been there many times to work at an orphanage, but they also got married there just over a year ago.  Matthew and I were thrilled to go to their wedding and are always game for celebrating with food from other countries. 

Sarah asked me to bring rice and red beans (and thankfully provided me the recipe to follow) as well as tropical fruits (so I looked up fruits found in Haiti).  I spent the morning writing in my blog and reflecting and then quickly prepared the food for the party while Matthew rested so he would be able to stay for the entire evening.

It was a small gathering with just Chris, Sarah, Erin and all the kids.  The evening was perfect.  The kids all played together while we had a chance to visit and catch up on life.  The food was delicious, and the company was a lot of fun.  It was the perfect way to ring in the new year.  Of course, there was even a fire work show ready to go at midnight.
