Learning to Cook more Foods!

Most people don’t know that Matthew has gastroparesis… which means that his digestive track is paralyzed and without medications it does not work.  His eating habits have changed drastically lately.  In fact, for about 6 months all we ate were chicken, potatoes and asparagus.  On occasion, I would eat something different, but I would cook Matthew the same meal unless we were on vacation or visiting friends. 

For years, Matthew had mentioned getting Hello Fresh, but I never realized he was serious about wanting to get it.  After small group one night Kerrianne mentioned how easy it was to make the meals and how good they were and sent us a link for a free box so we decided to actually look into it for the first time. 

If you know me… you know that I am not a confident cook.  I can’t just throw things together and make a meal to serve guests.  It probably has to do with the fact that I love just about anything and am one of the least picky eaters ever (except for a few foods that I don’t like no matter how they are cooked).  Matthew on the other hand is a really good cook and much pickier than me… unfortunately with all his pain he has had a lot harder time cooking lately. 

I was excited to get the first box and learn how to cook new meals.  Matthew and I have been having fun picking out a few meals each week to order.  Some days he is even up to preparing them since they are pretty easy to make and everything you need is all right there.  While I haven’t taken a picture of everything I made, I did take a few pictures along the way when I think of it. While I mentioned I was not a confident cook... I can follow a recipe which is why Hello Fresh works so well.  It may be more expensive than buying the ingredients we need, but it takes a lot of the stress of buying the ingredients and finding the recipes each week, which is what I need during this time in my life.

After starting Hello Fresh, we ended up getting blessed with an extra box of food.  It was when there was snow on the ground, so I was not able to drive and deliver the box to the correct house nor did I feel safe walking the icy streets to drop it off at their house.  I did leave it on the porch for them to come look for it since it is the neighbor whose mail is constantly mixed up with ours, but they never showed up.  I contacted the company, and their response was “enjoy a box on us” so I opened it up and found 5 meals with four servings each.  Half the meals we would not have purchased ourselves, but they were all delicious. A couple of the meals Matthew had no interest in eating (or couldn’t because he was allergic, so I was able to enjoy them to myself) and a couple we were able to enjoy with others.  We invited Kerrianne and Tim over dinner one night and had an enjoyable evening visiting.  The other was a fancy French Toast meal which I was able to make for Mason and Lily and still have leftovers for me.
